CAPITULATION

What do you do when beer fans say “I love hoppy beers?” If you’re any other brewery you might brew 6 different IPA’s for them to choose from, but if you’re Monkless, you capitulate, and dry hop your classic Belgian Tripel. We took one of our favorite beers, The Trinity, and dry hopped it with Citra and Hallertau Blanc to add a blast of flowery, citrusy aroma and flavor to our classic Tripel.

Hazy Day in Brussels

Inspired by the Grand Place in the city of Brussels and its hazy days (with a nod to the New England Haze Craze), this ale is brimming with a juicy, tropical and citrusy hop profile while delivering flavors of a classic Belgian Tripel. The blend of Belgian Pilsen malt, a fair amount of wheat and oats, and our classic Witbier yeast provide the base for this beauty, but the double dry hop with Citra, El Dorado, and Mandarina Bavaria takes it over the top!

When the F’n New Guy makes a mistake that turns into a happy accident, we name the beer after him. The FNG is a unique Belgian Abbey Ale that bridges the stylistic gap between a Dubbel and a Tripel. Dark Candi Syrup and abbey yeast work together harmoniously to deliver a delicious balance of toffee and caramel, with mild spice notes of clove and pepper in a dry, clean finish.

An unholy marriage between a Belgian-Style Witbier and a Cascadian Dark Ale. Midnight wheat and Special B honor this ceremony with delicate chocolate and roasty notes. Citrus flavors mingle respectfully by way of coriander and orange peel, tangerines added during fermentation and from an aromatic bouquet of Pacific Jade, Citra and Idaho 7 hops.
